I took my first cross country trip as a vegetarian last year (the first 6 were as an omnivore) and wanted to leave a trail for fellow veggies. Finding good Vegetarian/Vegan food (my wife is vegan) in between the coasts is difficult, but there are some veggie oases in the fly-over states. This blog isn't about New York City, Portland, Seattle, Los Angeles or anywhere else that veggie food is easily accessible - this is about everywhere else.
